The Regulation prescribes the quality requirements for raw milk that is intended for the production of the cheese whose ageing period is at least 60 days and the procedures for assessing the compliance of the raw milk with quality requirements. Food business operator who produces or collects raw milk intended for the production of cheese shall meet the requirements laid down in Annex I to Regulation (EC) No 852/2004 of the European Parliament and of the Council of 29 April 2004 on the hygiene of foodstuffs (hereinafter Regulation No 852/2004) and Annex III, Section IX, Chapter I, except for the requirements laid down in Chapter I, Part III, Paragraph 3, of Regulation (EC) No 853/2004 of the European Parliament and of the Council of 29 April 2004 laying down specific hygiene rules for food of animal origin. The market participant referred to in Paragraph 2 of this Regulation shall inform the Food and Veterinary Service (hereinafter the Service) when commencing the production of cheese or the collection of raw milk intended for the production of cheese. The Service shall take a decision to permit the use of raw milk for the production of cheese if the raw milk conforms to the requirements laid down in this Regulation.
