These Regulations implement Council Directive 2002/99 laying down the animal health rules governing the production, processing and distribution of products of animal origin for human consumption. They also provide for the appointment of authorised officers to implement the Regulations and for prosecution of offences. A person shall not place on the market or attempt to place on the market a product of animal origin and shall not have in his or her possession without lawful authority a product of animal origin unless the product complies with the food law of the European Communities. A person shall not produce, process or distribute a product of animal origin unless it meets health requirements as laid down in regulation 8. Other provisions concern inspection and record keeping.
