The aim of the present Ordinance is to ensure the quality of meat and meat products, as well as of fish and fish products in Austria. It applies to cattle, pigs, sheep, goats, horses and others. To detect specific diseases, animals have to be examined carefully before slaughtering; should any doubt arise, the slaughtering shall not be authorized. Part 3 establishes procedures for the examination of meat after slaughtering. The meat is declared unfit for human consumption if one of the diseases listed in article 20 is detected. A special procedure governs the preparation of meat for human consumption. Part 6 concerns the examination of fish and fish products. The Ordinance deals also with the authorities supervising slaughterhouses. The Ordinance consists of 30 articles divided into 7 Parts.
